Abstract

Emerging obesity and type 2 diabetes and diet-related noncommunicable disease trends highlight the need for actionable and scalable solutions to enhance diet quality and metabolic health. Quinoa pseudocereal is a plant rich in mineral, bio-active compounds and high-quality protein, as well as dietary fibre with potential relevance to cardiometabolic health. The present study proposes a methodological approach for the evaluation of the quinoa enriched bread as functional food intervention among adults with high metabolic risk in Pakistan. The intervention is a comparison with the standard wheat bread and wheat bread fortified with quinoa flour; anthropometric, metabolic, dietary, satiety and well-being parameters are assessed. In simulated analyses, there are potential improvements in fasting glucose, triglycerides, waist circumference, dietary fibre intake, satiety and well-being. These are simulated results, however, and are not empirical. To prove the effectiveness, acceptability, affordability, and the relevance of quinoa enriched bread to public health, rigorous research must be conducted involving real participants, validated measures, and appropriate ethical oversight.
